Start the New Year

With a Sweet Apple Coffee Cake

Blowing the ShofarApple Coffee Cake  

4-5 apples, peeled and thinly sliced
5 tablespoons sugar
2 teaspoons cinnamon
4 eggs
2 cups sugar
1 cup oil
2-½ teaspoons vanilla
3 cups flour, sifted
3 teaspoons baking powder
½ teaspoon salt
In a medium bowl, combine apples, 5 T sugar, and cinnamon, and set aside.
In a large bowl, beat together eggs, 2 C sugar, oil, and vanilla until smooth.
Combine flour, baking powder, and salt, and add a little at a time to egg mixture.
Pour into a greased and floured tube pan in layers, beginning with a third of the cake batter, then half the apple mixture, and alternating batter and apple mixture for a total of five layers.
Bake at 350o for 1 hour, 20 minutes.
You may add confectioner’s sugar on top of cooled cake.
Cake freezes well; wrap in foil securely.  
Serves 10.
